Mom's Fresh Strawberry Pie

There is nothing like Fresh California Strawberries!!  


Mom's Fresh Strawberry Pie


9-inch Baked Pie Shell 
3 Pints (6 cups) Strawberries, hulled, washed and drained
1 cup Sugar
3 Tablespoons cornstarch
1/2 Cup Water
4 to 5 drops red food coloring if desired
Whipped Cream


Bake Pie Shell and let cool.  In small bowl, crush enough strawberries to make1 cup.  In a medium saucepan combine, sugar and cornstarch.  Add crushed strawberries and water.  Cook until Mixture boils and thickens stirring constantly.  Stir in food coloring if desired. cool. 


Spoon remaining whole or sliced strawberries into cooled pie crust.  Make sure strawberries are well drained.  Pour cooked strawberry mixture over top. Refrigerate 3 hours or until set.


To serve, top with whipped cream.  You know Dad likes this!!  Love Mom
